Brownie layer:
- 1 box brownie mix OR
- 155 grams butter
- 1 ¼ cup sugar
- ¾ cup cocoa powder
- 2 eggs
- ½ tsp salt
- 2 tsp vanilla extract
- ½ cup all purpose flour
1 packet Oreos
Cookie layer:
- 1 packet cookie dough OR
- ½ cup butter (at room temp)
- ¼ cup brown sugar
- ¾ cup granulated sugar
- 1 egg
- 1 ¼ tsp vanilla extract
- 1 ¼ cup all purpose flour
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp baking powder
- 1 cup chocolate chips
Directions:
Preheat oven at 350 degrees and Line the bottom of a 9x9 baking pan with tin foil and then spray the foil lightly with baking spray.
For the brownie layer:
Follow instructions on the box if using brownie mix OR
In a medium saucepan, melt the butter over medium high heat. Add the sugar and cocoa powder once the butter is melted. Whisk to combine and remove from heat. Add the salt, vanilla and eggs and continuously whisk until the eggs are combined. Add the flour and continue to mix. Set batter aside.
For the cookie layer:
Follow instruction on the packet if using ready made cookie dough OR
In a large bowl, cream together the butter and sugars with a hand mixer. Add the eggs one at a time and then the vanilla, scraping down the sides of the mixing bowl as you go. Add the flour, salt, baking soda and baking powder and mix on low until incorporated. Fold in the chocolate chips and then set aside.
Assemble:
Start by gently pressing the cookie dough into the bottom of the pan, making sure to create an even layer.
Then add a layer of Oreos on top of the cookie dough. Line them as close together as possible making sure not to overlap.
Lastly: Pour the brownie batter on top of Oreo layer. Use a spatula to make sure it's even.
Bake for 30-35 minutes. Test with a knife to see if the center is done. Even if the knife comes out with a little brownie, it’s ok because it’s better than being over baked!
