Easy and Quick Recipe for Banana Muffins

These delicious banana muffins are easy to prepare in case you’re looking for a last minute post Iftar snack. Bonus: They will be ready in just  half an hour.

 

Ingredients:

  • 1-1/2 cups all-purpose flour

  • 1 cup sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 medium ripe bananas

  • 1 large egg, room temperature

  • 1/3 cup vegetable oil

  • 1 teaspoon vanilla extract


Method: 

  • In a large bowl, mix all dry ingredients

  • Now in another bowl, mash the bananas. Add egg, oil and vanilla extract. Stir the dry ingredients until they are moistened

  • Fill greased or paper lined muffin cups half full

  • Bake them at 375° for about 20 minutes or until a toothpick inserted in the middle comes out clean

  • Let it cool for 10 minutes

  • Remove from pan to a wire rack to cool completely
