Ingredients:
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 medium ripe bananas
- 1 large egg, room temperature
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
Method:
- In a large bowl, mix all dry ingredients
- Now in another bowl, mash the bananas. Add egg, oil and vanilla extract. Stir the dry ingredients until they are moistened
- Fill greased or paper lined muffin cups half full
- Bake them at 375° for about 20 minutes or until a toothpick inserted in the middle comes out clean
- Let it cool for 10 minutes
- Remove from pan to a wire rack to cool completely
